THE PART NOBODY SEES
The hard part was never the counting. It's that you have to do it again.
You pull the drawer. Twenties in one pile, tens in another, fives, ones, the hundred someone paid with at lunch. You count each pile. You add them up.
And then the total doesn't match the register. Not by much. But enough that you can't bank it. So you start over. Dinner waits. The staff waits. You stay.
Nobody else can take it over, because the count only works if one person does the whole thing in one sitting. A calculator doesn't fix that. A second pair of hands doesn't fix that. The thing that eats your night is the recount, and the recount is built into counting by hand.
